Winter: Rest and Pruning

The olive tree’s cycle begins in winter, when it enters a period of vegetative rest. This is the ideal time for pruning – a crucial task that defines the health and productivity of the tree for the rest of the year.

At Es Guinyent, pruning is done manually, branch by branch, respecting the tree’s structure and encouraging good airflow and sun exposure. Though quiet, this work is essential to ensure a balanced, high-quality harvest.


Spring: Flowering and Pollination

As spring arrives, the olive trees awaken. New leaves begin to sprout and, by late April or May, delicate white flowers appear – the start of a new cycle of life.

During this stage, the grove becomes a vibrant ecosystem. Bees and other pollinators play a vital role in fertilising the flowers, only some of which will develop into olives. A stable climate, free from frosts and strong winds, is crucial for the success of this phase.


Summer: Fruit Development

Throughout summer, the olives slowly grow. At first, they are small, green and hard. As the heat and sun ripen the fruit, the olives begin to accumulate oil within. During this period, proper irrigation management and sustainable pest control are essential.

At Es Guinyent, the harvest is carried out with great care, combining traditional and modern methods. We pick the olives at just the right moment – neither too green nor overripe – to preserve their aromatic qualities and freshness. Once harvested, the olives are swiftly taken to the mill for cold extraction, retaining all their properties and preventing oxidation.


From Olive to Oil: Crafting with Soul

After harvesting, the olives are washed, crushed, and gently mixed at low temperature. This process releases the pure juice of the fruit, which is then separated from water and solids through decanting or centrifugation.
